They are using special stoves, they are like blast furnace, basically built for wok cooking, I believe some in restaurants have a foot pedal, to control them, so, you can't get that result. You can mimic this cooking on a griddle something like a Blackstone, et al. outdoor griddle, I suggest a 2 burner one, to stage heating zones, it makes it easier to cook on as some foods cook faster than others, makes a heated cooling zone, etc. A 1 burner will work but requires a lot more staged timing. If you insist trying this at home on a standard stove, buy a carbon steel wok, it will have to be seasoned the same way, or more use, the more slippery. You can't scrub, soap clean it, treat it like cast iron. Cast iron woks found in the US just don't work as well with this kind of cooking. A carbon steel wok will get ripping hot fast, so be carefully. Read up on it, I'm not an expert, but,. understand the issues of oils and flash points. It's easy to get a pan fire if you are careless. We never use animal fat oil, very low dangerous flash points.
